Okay, so we only moved to a different state, but after spending 20 years in NOLA, with a partner who went to culinary school in Houma, LA, we're a bit picky when it comes to what we use to cook our favorite Louisiana dishes. We have searched high and low, when we found Bourgeois, we struck gold. Their andouille is just right - the right flavor, the right texture, the right smoke.
My cousin in West Texas brought us some Boudin he ordered from the folks at Bourgeois Meat Market. It was so good we ordered several items for ourselves. I can't believe how good it was, we especially loved the smoked andouille. We were very impressed with how efficient their mail order process flowed and the products stay so fresh right to our doorstep even in this 100° Texas heat. Thanks again my Cajun friends!
