Brett Rome

Brett is in charge of producing all of our in house made products at the new location in gray.  He started when he was a sophomore at Nicholls State University in 2015.  He slowly worked his way up into a leadership position through hard work and having a passion for the product.  He graduated from Nicholls in May of 2018 with his Bachelor’s in Petroleum Safety and in August of 2018 left to go pursue that career.  After a long 7 month span he realized that the Bourgeois Meat Market life was for him and asked to come back.  Thankfully, Beau and Shane agreed.  


Brett has been processing deer since 2008, starting off with Wildlife Butcher and Smokehouse in Schriever and continues to process with us now.  His Uncle, Allen Cortez, is who showed the importance of hard work, loyalty, accountability, and quality. Which Brett instills daily into his crew.  


Since then Brett has been hard at work on continuing the Bourgeois Meat Market legacy.  Day in and day out he and his Back of House team pump out all of our amazing products, he keeps the standards high and is proud of what he does.  Brett married his wife, Chelsea in 2020 and has two sons.  Cooper (2021) and Colton (2022) aren’t quite tall enough yet to vacuum pack yet, but as soon as they can, their summer vacations are gonna be filled with their Dad teaching the importance of hard work, loyalty, accountability, and quality.  


Knowing that he is producing our products that are popular not only locally, but are known and respected all across the country is something he takes with pride and it reflects in his work.  Day in and day out he is innovating and trying to find what the next big product will be.  Our smoked bacon (sold at the gray location) is his first, but will no where near be the last piece of his legacy he leaves.
