Our Bourgeois Hog Cracklins are made the old-fashioned way, preserving a tradition that dates back to the early 1900s. Unlike modern methods that leave meat on the skin, we use the skin with a little fat left on the backside, slow-frying them until perfectly tender. The result is a classic, crunchy snack seasoned with just a pinch of salt—nothing more, nothing less.
In the early days, every part of the animal was valuable, and nothing went to waste.
